Having recently procured a huge bag of cranberries (‘Tis the season to do Cranberries fa la la la la la la la la) I’m always looking for a way to squeeze them into the mix, and having consumed rather a lot of Cranberry and White Chocolate cookies recently, it was time for a change…. And here it is, the recipe is exactly what I used, but when you cook it just use whatever you like!
- 200g pack of digestive biscuits
- 125g butter
- 300g Green & Blacks dark chocolate
- 3 huge heaped & dripping tablespoons of golden syrup
- 90g of mini marshmallows
- 100g of dried cranberries
and here’s what to do…
- Melt the butter, syrup & chocolate (break it up) in a pan over a low heat until it looks like Willy Wonka chocolate river consistency & like Augustus Gloop you want to jump in.
- Put the biscuits in a big bowl and bash them with a rolling pin into chunks of whatever size you like them.
- Mix the cranberries and marshmallows in with the bashed biscuits
- Pour in almost all (save about 1/3 of the mix for later!!)the beautiful melted chocolate mixture & stir well to cover & combine!
- Tip into a foil lined tray/container/whatever you have! and flatten, pour over the rest of the chocolate & spread to cover a little festive touch of edible glitter or sparkly balls could be sprinkled on at this point!!
- Pop tray into fridge for at least 2 hours to go hard, cut into whatever size you like & eat enthusiastically with a nice cup of tea!
I would have taken a picture, but quite frankly they don’t look much & my presentation may put you off having a go!!!
PS….these are fabulous to make with children, but may lead to feeling of devastation when bowl licking duty arises and you realise you have to share….

i like any non cooking cooking and my teens love @mumsrock fridge cake i will be giving that a go still waiting for the cookie recipie though an by the way i cant get to sleep if i keep tweeting will santa not come next week xx

You’ve made me right proper hungry Mrs! I’ve been looking for a Rocky Road recipe as well. My hubby insists that raisins/sultanas must go in it but I disagree. Will try to make them tomorrow!
